Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce
1/4 cup ketchup
2 cloves garlic, minced
1/2 teaspoon ginger, minced
1/4 teaspoon crushed red pepper flakes
1 can (20 oz) pineapple tidbits, drained
2 tablespoons cornstarch
2 tablespoons cold water
Cooked rice, for serving
Directions:
Season chicken breasts with salt and pepper, then place them in a slow cooker.
In a mixing bowl, whisk together pineapple juice, brown sugar, soy sauce, ketchup, minced garlic, minced ginger, and crushed red pepper flakes.
Pour the sauce over the chicken in the slow cooker.
Cover and cook on low for 4-5 hours or until the chicken is tender and cooked through.
Remove the cooked chicken from the slow cooker and shred it.
In a saucepan, combine cornstarch and cold water, then stir in the sauce from the slow cooker. Bring to a boil and cook until the sauce thickens.
Return the shredded chicken to the slow cooker, add drained pineapple tidbits, and pour the thickened sauce over everything.
Serve over cooked rice.
